Gingerbread Pancakes

I LOVE Gingerbread!  And my whole family LOVES pancakes so I created this Gingerbread Pancakes recipe to enjoy around the holidays!  Perfect for those cold winter mornings (or even hot ones like we have here in the islands!) or as part of a festive Christmas brunch!

Gingerbread Pancakes

2 eggs
2 cups milk or almond milk
1/4 cup coconut oil
1/2 cup molasses
2 Tbsp brown sugar
1 tsp salt
2 Tbsp baking powder
2 cups whole wheat flour
1 1/2 tsp cinnamon
1 1/2 tsp ground ginger
1/2 tsp ground cloves

Beat eggs. Stir in milk, oil, and molasses.  Add brown sugar, salt, and baking powder and blend.  Blend in flour, cinnamon, ginger, and cloves until all but very fine lumps remain.  Cook on lightly greased surface over medium high heat.  Turn pancake when edges become dry and most of top is bubbly.  Serves 6-8.
